This place is famous for a certain “brand” of Cantonese cuisine. The dishes are mainly all coming from an area or district of Guangdong province(廣東省) known as Shunde (順德), under Foshan city(佛山市).
The food are generally all bland or non-spicy in nature, as is the tradition for Cantonese food in general, with emphasis on preserving natural flavours.
The standard of cooking here in this restaurant, and therefore the food is actually quite high . It is therefore generally accepted as good “tasting” food in Hong Kong.
It will be the ideal sort of food for anyone who also prefer non-spicy “natural” tasting food of the Cantonese tradition.
One famous dish is made from pounded fish. The inside of Mud carps (Cirrhina molitorella) or 鯪魚 is first deboned or scraped out and pounded into a paste. Then the paste is put back into the outer “skeleton” of the same fish as if the fish was never disturbed in the first place. [picture 19.]
The fish is then litely spiced with salt and wine etc..and then fried as if for other fishes before serving. The way of preparing the fish is quite unique.

因為沒枱,安排兩圍枱入房坐,由於沒有收千多元房間费,服務員拒絕開電視给我們看。如此服裝,以後不會再去消費。

A traditional Shunde cuisine restaurant. The chefs put a good effort in innovation as well. A few chinese restaurants that willing to spend time for some traditional process. However, the price is worth for that! If you need some wine, they can offer as well.
