終於去左全港首間法式甜品”達克瓦茲”( Dacquoise)
專門店,聽個名可能你唔會知係咩黎,
但Google一下就知道原來法式甜點除左Madeleine,
Macaroon,仲有Dacquoise係好受台灣同日韓寵愛!
講左咁耐,究竟佢係咩黎?其實主要係由杏仁粉、蛋白、
糖粉同麵粉整成餅皮,外面咬落會脆脆地,
裡面就好似蛋糕咁鬆軟,中間就加左奶油霜,
係由奶油同cream整既,當然味道就視乎你簡既口味而定啦,
而餐廳亦都改良左唔少,例如加厚餅皮,
配合返香港人口味!而店鋪簡潔風格配合粉紅格調,

▫ 以往係以伯爵茶包溝埋牛奶一齊煮,
而家經改良後轉左做伯爵茶粉,相對香味會更加濃郁,
我就最鍾意呢隻味,相當香濃吸引!
▪ Tiramisu Dacquoise – $36
▫ 賣相好吸晴!沿用Tiramisu概念將原來既外形還原,
外面都加左朱古力粉,裡面都加左Mascarpone意大利
軟芝士同埋baileys酒,你會聞到好香酒味,
加埋凍食配合真係不得了,裡面個餡好似食緊雪糕咁,
超正!呢個一定要試!
▪ Caramel Fleur de sel Dacquoise – $36
▫ 用左焦糖同奶油再配合法國最靚既鹽 – 鹽之花
同配料撈埋之後整成既味道會中和左本身既甜味,相對
個感覺會幾清新,口感好特別,焦糖味唔會太重,唔錯!

Staff仲提醒我比左個保存方法,提我記得”達克瓦茲”
係無添加防腐劑,一般要擺係雪櫃最多可以擺3-4日,
冰箱就5-7日,重點提我一定要盡快食左佢,
確保最新鮮既情況下先食到個精粹,但如果擺左冰箱
記得要解凍10-15分鐘先好食呀,如果唔係會有過硬既
感覺,口感自然差D啦!

Very lovely and wonderful French dessert! This shop is white in colour with colourful flowers decorations. There are some lovely and special containers.
The variety of different tastes and colours of Dacquoises. New tastes will be launched every few months. I bought 4 Dacquoises for my friend, really lovely with crispy outside and soft inside, healthy and not too sweet. There is making kitchen for the chief to make the dessert directly inside shop, which will be fresh and no preservatives.

剛放進嘴裡,我就震驚了。
Dacquoise 也非常好。
是我吃過最好吃的檸檬蛋糕和dacquoise了,就買這個去旁邊的noc coffee吃吧~!
平時返工放工都會經過,終於有一日放工行左入去買2件返屋企比老婆食,點知真係出事,老婆2日唔夠又問幾時再經過呢間舖頭買幾件做飯後甜品,真係不得了
原来香港也有达克瓦滋卖耶🤭🤭
其实这个是与马卡龙相似的甜品来的

颜色挻不错耶〜很幸运地买到想食的味道
拿到回家后要马上放进冰箱以保持温度
然后我就把美食放去小碟子🤤🤤
拍照片后就很快和家人切开来食〜
外皮比马卡龙松脆没有这样甜☺️☺️
而且中间的配合不同的饀料
感到有一种新鲜没有腻的感觉🤭
对于第一次食这款达克瓦滋甜品
令我对法国甜品另眼相看
通常人们的感觉法国甜品是很甜
但这个比较适合现代人的少糖味道
厨师挻甜心的配方🤭
早前朋友聚會食過,好記得入口好鬆脆,而入面夾住的餡料真係好似雪糕,真係好難忘,有日咁小啱行經佢哋鋪頭見到佢哋推出左幾隻新口味,當然要買返幾件返屋企慢慢品嚐,今次買左佢哋皇牌的抹茶味,開心果草莓味,芝麻味,仲上之前一試難忘的蘭姆葡萄味,店員提醒可以放在冰箱保存5-7日,我即時放心去買,不過一定要室温解凍15分鐘,先講抹茶味真係好濃郁而且仲有小小的麻糬在中間qq地,10分滿分的話我比10分,之後再試的蘭姆葡萄味,入面一粒粒提子酒味好濃郁,超正
食閉門羹但顯示營業中

店員介紹其實係同整macaron差唔多材料
但其質感鬆軟酥脆 一點兒黏膩都冇
忌廉餡料幼滑濃稠 仲有鳳梨粒喺中間
放工買咗幾個返屋企開心share

抹茶濃郁回甘 有埋qq嘅糯米糍
焦糖奶油甜而不膩 同抹茶甘澀形成對比
兩款都深得我心
伯爵茶可麗露($32)
外表焦啡色唔吸引 但其實好好食
微脆焦糖硬殼 入面綿密濕潤
要用較貴嘅法國銅模烘焗 外層口感先會做得咁好

白色為基調既鋪頭在街上格外顯眼,鋪頭內配以柔和既燈光,簡潔的裝潢再加上親近大自然的花草裝扮,顯得非常有情調。讓人更加期待這甜品是否會如店內的裝潢一樣掠奪食客的心。
店家為香港首家達克瓦茲專門店,當然要食下佢度既主打。因為都係首次嘗試法式甜品,所以都特地上網查左達克瓦茲究竟為何物,原來佢係是一種由扁桃、榛子和新鮮奶油製成的泡沫蛋糕。
抹茶麻糬達克瓦茲
小巧的外型,兩塊厚厚既餅皮夾住墨綠既抹茶餡。未切開前都見唔到藏在中心煙韌白色既麻糬。
一啖咬落,你會發現佢雖然外表個餅皮酥脆,但內層鬆軟。聽講佢既脆原自糖粉,你自然會以為這樣既甜品甜度一定超標,但由於佢中間搭配左濃郁既抹茶。抹茶苦中回甘,這樣豐富既層次以及味蕾既衝擊更讓你品嚐到另一番滋味。
伯爵茶可麗露
朱古力色既外表不似鋪頭其它甜品那樣色彩繽紛,但正因為佢既獨特一下子勾起我既好奇心。並買下品嚐,估唔到,佢個外表係脆口到會卡滋卡滋響。好得意,再探到佢既內心你會更加驚喜,因為佢個內心與外表真係180度大不同,軟熟Q彈既內心,甜得黎又略略帶有伯爵茶既甘,這樣既搭配撞出不一樣既火花。
店家貼心提示:本產品含酒精。雖然我食唔出有酒味,所以含量應該唔多,但酒精過敏人士最好不要嘗試。
檸檬🍋小蛋糕.
一眼望落,檸檬🍋小蛋糕無論在顏色、香味以及size都與檸檬似得十足十。
見到黃色既表面為檸檬朱古力。甜中帶有檸檬獨特既酸。這樣既搭配令蛋糕口感上更加清新並不甜得過龍。
中心部分亦十分柔軟。
老實講,本人雖然十分喜歡甜品,却不喜歡甜度超標既食物,這次是第一次嘗試,但我知下次想食甜品,我一定會唸起呢度。
Today, I passed by the wan chai alley street as usual. Passed by this newly opened dessert place with something different to offer. I went in and saw a lot of cute and girly dessert – similar to macaroons but a lot bigger and looks crunchy. they offer ten different flavors and their popular flavor is earl grey tea & rum flavor so I picked these two. they also offer a lot of different kinds of dessert 🧁 canele and brownies! the decoration is fancy and perfect to enjoy the dessert in store too. packaging was definitely cute and perfect for gifts 🎁 earl grey flavor is delicious, like ice cream sandwich! And the outer crunch tasted a bit of almond flavor which I loved. another product they offer is something good for photo taking. Pink x blue crunch with rum filling. So different and tasty too. Definitely worth giving it a try if you pass by here!
First time trying this Dacquoise, or is very tasty, crisy, not as sweet as macaron. The Canelé also great, I love the matcha filling.

食就幾好食,但C/P值低,加價到$40/舊了……
伯爵茶達克瓦茲的茶香味很濃郁
法式甜點喺香港未咁普遍時,灣仔已經開左呢間小店,一直好評不斷,朋友訂過佢嘅馬德蓮同費南雪做散水餅都話質素高。近日佢地推出左抹茶雪球曲奇,難得阿妹肯買埋返黎畀我,我就唔客氣咁試埋鎮店之寶達克瓦茲。
🍽超濃抹茶榛果雪球餅乾
呢款曲奇真係近期最愛,唔好睇佢細細粒,結構相當複雜,以Valrhona白朱古力加小山園抹茶粉製成,內有榛果碎增加口感,外殻灑左一層帶點苦嘅抹茶粉,食到最尾則由鹽之花帶來鹹味。一盒八粒好快就食完,但用料同手工絕對對得住個價錢。
🍽抹茶麻糬達克瓦茲
達克瓦茲嘅口感無可挑剔,外層酥脆,但內層柔軟煙韌,奶油霜用上帶甘嘅青嵐抹茶,嘅麻糬偏軟身細細粒,唔會搶左抹茶嘅風頭。
🍽焙茶夏威夷豆達克瓦茲
達克瓦茲面頭撒上糖粉所以會甜少少,我覺得配濃香嘅焙茶奶油霜更夾,夏威夷豆嘅存在感唔係好高,但成個配搭好好食。
下次要試埋流心抹茶瑪德蓮同可麗露!
Molten matcha flavour. Not too sweet and tastes like chocolate if you don’t microwave it a bit. Still yumm
同事請食散水餅,揀左 Lovever Patisserie法式甜點 – 達克瓦茲。
原來達克瓦茲(Dacquoise) 起源是十七世紀法國宮廷經典點心。
烘烤前會在表面撒上糖粉,利用高溫形成顆粒狀脆皮。
由於使用非常大量的杏仁粉,所以食用時,可以感受到餅殼的非常濃厚的香氣,表層酥脆內部柔軟輕盈,搭配不同奶油霜餡料,口感豐富有層次。
達克瓦茲口味選擇有不少,我這件係榛果脆脆達克瓦茲 Crunchy Hazelnut Dacquoise 。
除了香濃榛子味道,中間仲有脆脆。
表層鬆化,好輕身,又吾太甜,食多幾件也不怕。
作為散水餅,送禮係不錯選擇。
Dropped by today after reading the amazing reviews.
The staffs were friendly, the store was neat and decoration was cute…. but the pastries weren’t anything close to what we had in France, nor in some authentic French bistros in hk…. Especially for the canelé, which is expected to be moist and tender on the inside and a crispy (slightly hardened) caramelised crust on the outside; the one sold here was extremely hard and cold on the inside and out….
I read that the founder is recognised with Le Cordon Bleu’s Diplôme de Pâtisserie so I am sure s/he has a special touch on the creation. Respectably I think I dislike the pastries as I prefer the classic flavours and textures while they are offering a more innovative twists on the recipes.
Happened to walk past this patisserie shop in wan chai after meeting. Bought 2 financier. One is double chocolate and the other is honey apple. Excellent texture and the taste is very good as they are not artificial at all! You can tell the owner put in a lot of effort in order to deliver such a genuine taste. Worth every penny and look forward to trying other products next time.
P.S. the young lady in store was very polite and cheerful, thank you for your good service. Will definitely revisit again.
