整體都做得幾好。
豬肩肉,嫩滑無渣。腩肉有灸香,夠淋,有點散,但都好味,係細塊了一些。
豚骨魚介醬油,咸度剛好,夠濃之餘沒有過咸。魚介和豬⻣湯比例洽當。
麵為幼拉麵,具彈性和煙韌,合格。加底另上的麵條則更具麵味。
筍絲切得夠幼,跟麵身的粗幼度匹配。
紫菜,十分有心選上碎紫菜,而不是又乾又韌的一大塊, 紫菜很快就出味而且很夠味,充分融合在湯底的味道中,加多些層次。
但預設加了洋蔥粒,沒有炒香過,帶點辣口,配麵配湯的效果一般,配肉吃還可以。
新店,價錢合理地有上好的質素。不錯。
整體不錯,因為小店格局,試業,麵的選擇不多。能配上一塊紙巾更好。
湯頭算清爽,加了生洋蔥和海苔感覺新鮮。叉燒用火槍燒後很香,如果厚切效果更佳,而慢煮版本則只有少少黑胡椒味。味玉外觀吸引可惜無味,實在可惜。

熱湯濃魚香,膠而不膩, 加埋碎紫菜,洋蔥加多點清爽,白肉有嫩肉味,叉燒用火烘完有油香而入口即化,麵無梘水,淥嘅時間啱啱好, 好味 ?? …
$118一碗唔大碗嘅拉麵。只有幾款麵揀,嘢飲得汽水。日式拉麵用幼麵第一次試。湯底極濃,冇味精成碗湯飲晒。叉燒有兩種口味,兩種都好味。豚腩肉面用火搶燒過甘香。溫泉蛋嫩滑。有少少辣魚介吊味。我諗老闆對自己嘅拉麵極有信心!

Can’t believe HK has such quality Raman! Everyone try to minimize the cost and pocket more profit hence they prefer precooked ingredient, soup. But this restaurant they made their soup, meat, bamboo from scratch! It’s time consuming and costly effort!
Yes, it’s not the cheapest Raman around that area but it’s definitely the best! Hong Kong needs more this type of restaurant.
Service is great! People are so nice! Convinient location! Food comes so fast and tastes so fresh. Great environment and very good quality noodles. The meat is so delicious. The eggs are so good too.

拉麵和湯底都認真唔錯 ?? …
A very decent bowl of ramen prepared by the owner himself. Love his attention to detail because that definitely shows in the final product. Everything in that bowl (except the slight 鹼水味 in the noodles) was great. Overall, worth a try if there’s no queue.

份量對好多男仔嚟講可以話比較少,湯底如果多一啲甜味就不得了,整體都係自己喜歡嘅味道? …
Tried the new ramen shop which specializes on the pork bone with fish based soup. The soup was thick & rich in Bonito fish flavor but a bit overpowering. It would be better if it’s less salty. The pork belly & slow cook pork were well cooked. Considering the price, it was ok but not great.

先講湯底,飲得出係足料,有層次,可惜調味太咸,同埋有口渴感覺。
麵方面,由於湯唔係九州拉麵果種濃厚稠稠的質地,唔使掛湯,所以呢度係用較幼身既麵,頗有咬口。
另外塊豬肩肉同埋隻蛋係做得唔錯,算有理由再試一次
湯底正!
作為拉麵愛好者既我,見到廣告介紹麵処一家,當然要去試下啦。佢哋暫時只得濃厚豚骨魚介醬油拉麵,所以一坐低就好快揀到要咩。
我點左料理長の選択,連糖心蛋。湯味濃厚,確實有點功架。叉燒係慢煮豬肩肉,所以好啉好好食。糖心蛋不過不失。整體而言,都可能話係一碗好用心既拉麵,可惜唔夠特式,只係一碗平實既拉麵,但因為價格相對比較貴,亦因爲咁,變左令我物非所值。要補充既係,我覺得物非所值,唔係因為佢唔好食,只係定價過過而已。
I admire the owner’s attention to detail for every bowl he makes. The soup is also flavorful without being too heavy. The fish and pork broth is very well balanced with the toppings as well. The level of care given to each bowl rivals some of the best ramen shops in Japan given its very reasonable price.
The ramen and soup was quite nice actually. However, not sure if just my case or it does have their own recipes for soft-boiled egg, it taste bitter. The bitter soft-boiled egg ruined my bowl of ramen as bitter taste remain for long and no even the taste of ramen coldnt covered it. Worth a try at the restaurant but personally would not recommend to add the soft-boiled egg (it cost extra).

Highly focus on making good bowls of noodle
準備到尖沙咀 The One 逛街,已到午飯時間,便來到厚福街尋找美食,看見此拉麵店挻特別的,只提供三款同湯底不同材料的拉麵作選擇,而且客人眾多,我便抱著好奇的心態一嚐究竟。
濃厚豚骨魚介醬油拉麵
我選擇了店長推介以及加辣醬,材料有火炙豬腩肉、慢煮豬肩肉、溏心蛋、洋蔥粒、筍、蔥,湯底味濃而不鹹,加入辣醬作調味,惹味可口,辣味恰好。
拉麵掛湯力強,軟硬適中。
豬肩肉軟腍嫩滑,豬腩肉用火槍炙過,入口油份充滿口腔,香口美味。
溏心蛋的甜度以及酒味控制得剛剛好,而且做得足夠流心,入口嫩滑香濃。
整體而言,食材新鮮,製作用心,環境乾淨,坐位寬躺舒適,是進食拉麵的好地方。因為疫情問題,暫時全單八折。
糖心蛋係我食過最糖心嘅蛋, 慢煮豬肉都好正!
It’s like the ramen I ate in Japan, it’s very delicious, it’s almost the best ramen I have ever eaten in Hong Kong.

Nice Ramen
Surprisingly good. They only serve one kind of ramen, the fish base pork bone shoyu with choices of meat and toppings. I ordered the chef’s choice which gives you both pork belly and pork shoulder loin. I like the shoulder loin more. The soup is savory without being too salty or too rich. Onion is a nice touch. They are now offering 20% off.

話說雖然頗常吃拉麵,
但還是第一次吃一間只賣三款拉麵的店!
而且這三款拉麵的湯底是一樣,只是配料上有少許不同而已
剛好我們是三個人一起來~那就三款也點就對了 v(◦’ωˉ◦)
直接在點單紙上劃好想要的!除了拉麵,還可以加配料~也有飲品
亦有特製加麵底,但這裡就是沒有小食喔

分別在於前者是慢煮豬肩肉,後者則是火炙豬腩肉。

三碗湯底都是豚骨魚介醬油~濃厚、鮮甜,不會覺得很鹹。
還帶著少許黏的質感,配上幼身的麵條剛剛好。
慢煮豬肩肉的質感很柔軟;豬腩肉的油脂部分很爽滑 …
其實吃落肥膩感並不重,加上火炙過更有微微的焦香!
沒有加一服務費,但要注意這裡只收現金。
麵好食,不過未去到驚喜嘅地步。
這家拉麵的味道抓到了很理想的平衡點,無論是湯,麵,配料,香味,口感,通通屬於上佳。豬肉的鮮度很高,豬骨魚介湯夠濃夠香,吃得出加了豬皮令湯頭更濃稠更香。麵是選用了沒有波浪紋的,沒很掛湯但配濃稠的湯頭又意外地夾。
整體而言很有深度,是上上之作,水準保持得很好,值得支持。

份量細,價錢貴,個湯底又咸。糖心蛋又要加錢先有。。。大把拉麵好食過佢。
昨晚第二次吃,整體水準比第一次差了,拉麵麵質變軟了點,湯沒之前的濃郁魚味,叉燒燒不夠沒之前的香,蛋也微妙地沒那麼好吃,整體吃著像普通還不錯的拉麵,沒了第一次吃的小驚艷水準。有點懷疑是不是晚上太多人光顧?昨晚也排了一會兒隊才能誰店用餐。我第一次吃是午餐2點多左右的時間,人很少,所以慢活出細貨嗎?希望下次光顧能回到第一次吃的水準,加油
